Fall Off The Bone

Many people think a fall-off-the-bone rib is excellent. The challenge is that 3-2-1 ribs take that to a whole new level. 3-2-1 Ribs are simply overcooked and are beyond mushy.

Cook To Temp And Feel

Saying a piece of meat must cook for x hours doesn’t make sense. Every piece of meat is different, and every smoker is different. It’s impossible to base a cook on time and have it turn out well.

If you spend the time to learn the proper finished temps of your meat and what to look for as far as feel, you will turn out a near-perfect rib every time.
