Today, we’re diving into a controversial topic—pellet grill myths. Some of these myths are widely believed, but it’s time to set the record straight. I've got my invisible flame suit on because I know some of you will come at me, especially for Myth #5. Let’s get into it!
Myth #1: Pellet Grills Can Explode If You Start With the Lid Closed
This myth has been around for a while, and I’ll admit, I contributed to it a few years ago in a video on common pellet grill mistakes.
Can it happen? Sure, but it’s incredibly rare. It usually occurs in older pellet grills without PID controllers and when the grill hasn’t been properly cleaned.
What about modern grills? Many manufacturers now recommend starting with the lid closed.
Verdict: Busted. Stop worrying about it and focus on cleaning and maintaining your grill.
Myth #2: Pellet Grills Can’t Sear
There’s some truth here, depending on the brand, but let’s break it down.
Lower-end models: Many grills max out at 500°F, and with the firebox far from the grates, you might only get a “baby sear.”
High-end models: Grills like Yoder can sear at temperatures up to 600°F; with grill grates, you can hit 800°F+. The diffuser door on Yoder models also allows direct flame cooking, making it a true searing machine.
If searing is important to you, invest in a grill designed to handle high heat.
Verdict: Mostly Busted. Not all pellet grills can sear, but many can—and do it well.
Myth #3: Pellet Grills Are Just Easy-Bake Ovens
Offset purists love throwing this one around, but here’s the truth.
Offset vs. pellet grills: While offsets require constant fire management, pellet grills use fans to circulate smoke and air for even cooking. They’re more efficient, but that doesn’t mean they’re effortless.
Learning curve: Every smoker, whether it’s an offset, kamado, or pellet grill, has a learning curve. If you think you can just set it and forget it without technique, you’ll be disappointed.
Pellet grills still require skill and knowledge to turn out great BBQ.
Verdict: Busted. They’re not Easy-Bake Ovens; they’re tools that need a good pitmaster behind them.
Myth #4: Pellet Grills Can’t Produce Great Smoke Flavor
Three years ago, I might’ve agreed with this one, but not anymore.
How to maximize smoke flavor: Pellet grills do produce less smoke than an offset, but with proper techniques (like lower temps and longer cooks), you can achieve incredible results.

Myth #5: My Pellet Grill Doesn’t Have Any Temp Swing
Alright, time to turn my flame suit to max because this one’s going to be controversial.
Why temp swings happen: Pellet grills rely on live fire, sensors, and controllers. Variations in pellet size, wood type, and density make maintaining a perfectly flat temperature impossible.
What does this mean? A 10-20°F swing is normal and doesn’t affect the quality of your barbecue. In fact, most grills are designed to average out temperature over time.
Don’t overreact: Constantly adjusting the dial or opening the lid will only make things worse. Trust your grill and let it do its thing.
Verdict: Busted. Temp swings are normal. Stop stressing and focus on making great food.
