Pellet, Gas, Kamado Grill - Rib Battle

I love smoked ribs. Normally I use baby back ribs, but in this video I used St. Louis style and they were delicious!

Let me start by saying Thank You! This video is to celebrate 1000 subscribers on my YouTube channel. I figured the best way to celebrate was a rib battle. I love smoked ribs, normally I use baby back, but in this video I used some Berkshire St. Louis style ribs and they were a hit. Battle videos aren’t to tell you which is better, more to show you the differences and give you an idea of how to cook a product on different grills.

It all starts with a quality piece of meat.

Berkshire pork has more flavor, is more tender, and costs more than traditional pork. In my opinion it is well worth it! Many people are more than happy to spend $5 on a cup of coffee, but when it comes to meat they buy cheap meat and it really compromises your results.

The Setup

  • Yoder YS640s at 250F running pecan pellets, top rack

  • Lynx gas grill at dome temp of 250F, A-Maze-N smoking tube with pecan pellets, outside burners on low

  • Komodo Kamado grate temp at 250F, cold smoker, and same pellets

  • Seasoned with Grill Mates Memphis Pit Rub and a yellow mustard binder

  • Cooked 3-4 hours until you can pick up in the middle a couple inches and ends touch grates

  • Wrapped in 1/4 beer for 45

  • Unwrapped and sauced with your favorite sauce

  • Let sauce tack up for 10-20 minutes


Results

As you can see from the video, all racks turned out very good. The gas grill cooked far quicker than I expected. I should have wrapped about 2.5 hours in. The Yoder ribs could have been wrapped at the 3:15 hour mark, and the Komodo Kamado could have been wrapped about the 3.5 hour mark.

They were all quite good flavor wise. The Komodo Kamado had the most chew and the gas grill were completely fall off the bone. I like them both ways, but prefer a bit of a chew on the meat instead.

Smoke

All had good smoke flavor. The Yoder had the most smoke flavor in this round. On the Komodo Kamado I used the cold smoker so I could use the exact same pellets and forgot to dry out the pellets first. This caused the pellets to go out a few times so I didn’t get as much smoke into them as I would have liked.

The gas grill has a nice amount of smoke. My wife choose them in a blind taste test!
