Today, on the patio, we made a delicious stromboli using the Yoder Woodfired Oven. Here's a breakdown of how it all went down:

  1. Preparation of the Dough: The process started yesterday with the preparation of the dough. Using 350g of warm water, 13g of fine sea salt, 1.5g of active dry yeast, and 500g of all-purpose flour, the dough was mixed and kneaded, first with a KitchenAid mixer, then by hand, before undergoing a two-hour rise. It was then divided, shaped into balls, and refrigerated overnight.

  2. Firing Up the Yoder: With the Yoder Smokers Wood Fired Oven insert ready and loaded with Bear Mountain Oak pellets, the oven was set to preheat to 400°F. A thorough cleaning of the oven and the pit probe was done beforehand to ensure accurate temperature control and minimize dust.

  3. Assembling the Stromboli: The dough was rolled out into a rectangle on parchment paper, not too thin, to maintain a bread-like texture. A homemade sauce made from canned tomatoes, olive oil, basil, salt, pepper, and fresh-cracked pepper from a pepper cannon (save 10% with code “RUMANDCOOK”) was spread onto the dough, leaving dry edges for sealing. The stromboli was filled with ham, pepperoni, sautéed red onions for a pop of flavor, and freshly grated cheese. The dough was then carefully rolled up, sealed, given an egg wash, and vented before being baked.

  4. Baking Process: The stromboli was baked for about 19 minutes at 400°F in the Yoder Wood Fired Oven, rotated halfway through for even cooking. Despite a minor blowout due to shimming, the result was a beautifully browned stromboli.

  5. The Final Product: After allowing it to cool for about 15 minutes, the stromboli was sliced open, revealing a delicious and steamy interior. Combining ingredients and the wood-fired oven cooking method resulted in a flavorful and satisfying stromboli that was well worth the effort.
