Getting Started

Vent Control: The Komodo Kamado's simplicity lies in vent control. The bottom vents control airflow in, and the top vent controls airflow out. Open the bottom vent to introduce more air for high-temperature cooks, like pizza. A unique feature is the removable insert for adjusting the charcoal basket size.

Charcoal and Wood Placement: Use Komodo Kamado's coconut shell charcoal for a clean, natural-tasting burn. Bury hickory wood within the charcoal for added smoke without a distinct lump flavor profile. Place a fire starter cube in the lump to ignite the charcoal.

Lighting the Fire: Open the bottom vent fully for maximum airflow during the initial lighting phase. Let the fire starter ignite the lump for about five minutes. Consider moving the lump on top of the flame for increased flame contact.

Assembling the Grill: Both grates have a convenient door for adding wood or water. Place a water pan on the lower grate to catch fat drippings from fatty cuts like pork shoulder. Insert a temperature probe at the back of the upper grate.

Vent Adjustment: Once the fire is lit, close the bottom vent halfway. Open the top vent gradually, starting with one or one and a half turns. Adjust vents carefully, as even small changes have a significant impact.

Dialing in the Temperature: 1/8” of a turn has a considerable impact. Make minimal adjustments and wait 5-10 minutes for it to stabilize.

Initial Heat Soak: Allow the grill to heat soak, as ceramic grills take time to absorb heat for even cooking. Heat soak contributes to the radiant cooking experience. The longer the heat soak, the better the results on food.

Temperature Adjustment: Begin by making small adjustments to the bottom vent, typically less than a quarter turn. Avoid adjusting both the bottom and top vents simultaneously for precision. Baby adjustments on the top vent fine-tune the temperature.
