Smoked Chicken Stuffed Shells
Introduction
This is so GOOD! This is my signature pasta dish that I have been making for many years. So many people have asked me to share it, so I decided I would break down and do a video on it.
You can also use my easy sauce from my “11 Secrets to Amazing Lasagna” video.
Ingredients:
4 boneless, skinless chicken breasts
1/2 tablespoon Diamond kosher salt
1/2 tablespoon fresh cracked pepper
1 tablespoon Granulated onion powder
1 tablespoon Granulated garlic powder
Olive oil
1 onion, diced coarse
Crushed tomatoes (2 cans)
Jumbo shells (about half a box)
1 pound mozzarella cheese, shredded
1 pound cottage cheese
Parmesan cheese
Red wine
Sugar (3/4 tablespoon)
Basil (1 tablespoon)
Oregano (1 tablespoon)
Instructions:
Prepare the Smoked Chicken:
Season the chicken breasts with a sprinkle of salt, pepper, onion powder, and garlic powder.
Smoke the chicken at 225°F with your favorite smoking wood chunks or pellets for about 45 minutes or until the internal temperature reaches 150°F.
Prepare the Sauce:
In a sauté pan, heat olive oil and sauté diced onions until translucent.
Add minced garlic or 3 fresh garlic cloves and sauté for 30 seconds.
Deglaze the pan with red wine.
Add crushed tomatoes, sugar, basil, oregano, salt, pepper, onion powder, and garlic powder.
Simmer the sauce for about 20 minutes.
Prepare the Cheese Mixture:
In a bowl, mix shredded mozzarella, cottage cheese, and Parmesan cheese.
Cook the Jumbo Shells:
Boil the jumbo shells in salted water for about 10 minutes until they are soft and pliable but not fully cooked.
Drain and sprinkle with olive oil to prevent sticking.
Assemble the Stuffed Shells:
Preheat the oven to 325°F.
In a baking dish, spread a layer of sauce.
Stuff each jumbo shell with a mixture of smoked chicken cubes and the cheese blend.
Place the stuffed shells in the baking dish.
Top with more sauce and Parmesan cheese.
Bake:
Cover the baking dish with foil.
Bake in the preheated oven at 350F for at least 30 minutes, up to 60 minutes, until the shells are tender.
Serve:
Let the stuffed shells rest for 5-15 minutes before serving.
Optionally, garnish with extra Parmesan cheese.
