Contrary to popular belief, you can get smoke on a pellet grill. Not as much as an offset, of course, but there are tricks you can use to help maximize your smoke.
Low and Slow
The first one I have spoken about a lot. Drop the temperatue down so the fire doesn’t burn as clean. The higher the temp, the less smoke. Start at 200 or 225F
Quality Pellets Matter
All of your flavor comes from pellets, do not use cheap pellets. I have tested multiple brands of pellets and there is a difference in the amount of smoke they put out.
Smoke Tube
There is nothing wrong with using a smoke tube, as long as you don’t overdo it. My general rule is no more than 50% of the total cook time.
Cold Meat
Meat only takes in smoke to about 165F. Start with cold meat, the colder the better.
