If you missed it, I recently added a pizza oven to the lineup. I've never had one before, so these cooks will be me learning on camera. I'm not one for practice runs on the channel, and I'm not even a planner. I typically decide during the week or that weekend what I want to cook and run with it.

The First Cook

You expect the first cook to be pizza. However, I did a quick one during the unboxing video and decided to try something else. I decided I was in the mood for wings and ended up being the first cook.

Given I hadn't cooked wings in it, I decided to use a marinade to help keep them juicy and hopefully help with any burning in case the fire got away from me. I would have preferred to marinate overnight, but I picked the wings up that morning and didn't have time. One hour it was.

How I Cooked Them

Here’s a quick overview:

  • First, I made slices into every piece to help marinade penetrate the meat.

  • Marinated for 1 hour in Smoke on Wheels BBQ marinade. (See link to atbbq under fav products)

  • I ran the oven at 600F with very little flame

  • Pre-heated a 9” x 13” x 2” cast iron dish to about 500F

  • Place wings in, draining as much marinade as I could

  • Cooked for about 8-10 mins

  • Added some wood to bring up the flames and char the outside

  • Turned as needed until nice and crispy

They turned out pretty good for the first attempt but were slightly overcooked. So next time, I will cook with more flames or start flames about 5 minutes earlier so I can get the charing early and not overcook.

It gives them a nice wood flavor. I certainly enjoyed them and will try them again soon!
