Foil Boat briskets are pretty popular right now thanks to Chuds BBQ. While he didn’t invent it, he has certainly made it popular thanks to his fast growing YouTube channel.
I decided it was time to try it on my Yoder.
Did Work?
Well, you tell me. How often do you see bark like that on a brisket coming off a pellet grill? Now I did use a couple methods from my 11 Tips for Maximum Smoke video, but all that time with the top exposed to smoke really helps as well.
Now I have to admit, I thought I almost ruin this brisket due to bringing it back up too high in temp after a 12 hour rest. Luckily I was pleasently surprised with the outcome.
How I Cooked It
Here’s a quick overview:
4 hours at 200 with a smoke tube
3-4 hours at 250 until it hit 180F
Applied a foil boat
Cooked until 201F
Put in my oven for an overnight rest at what I thought was 155, but turned out to be closer to 145.
Slice and enjoy
