Recently, people have mentioned how their ovens do not go down to 150F for an overnight rest. By default, most ovens only go down to 170F.

I did a previous video where I smoked a brisket on my Yoder YS640s and rested a brisket overnight at 170F, and I wasn’t happy with the results. The comment section was happening, and many said I was wrong. I decided I should have let it rest down to 150-160F before putting it to rest overnight.

Needless to say, these results were much better. I even used my offset, as most said I should have cooked it there.
