Pork Belly Burnt Ends
Pork belly is something I have not cooked before and since everyone said I should try some pork belly burnt ends, I did. I'm glad I listened!
Cubed vs Whole
There are two ways you can do this. You can cook it whole, then cube it for the final part of the cook, or cube from the beginning. I decided to cube from the beginning because I wanted to cover them in seasoning on all sides.
I put one cubed on a cooling rack so they were all fat side up. You want the fat to be in that hot air to help render out as much fast as possible. I fired up my Yoder YS640s and started smoking them.
Then, cook them until around 200F and cover them in your favorite sauce. Cook for another 20-30 minutes, and you are all set. They didn’t disappoint!
