Reverse Sear Tomahawk

The tomahawk steak always turns heads and is great to pull out when you have a dinner party.

A tomahawk is a big steak. It’s difficult to cook this well over direct heat so I always recommend doing a reverse sear. This will help ensure you get that perfect cook.

In direct heat until your perfect temp

In this video I use the Komodo Kamado, but you can do one on any grill pretty easily. Just follow the steps below.

Prep

  • 1 30-40oz Tomahawk

  • 50/50 Salt and Pepper

  • 50/50 Garlic and Worchestire powder (Link in video description)

The Smoke
I did not use any smoke in this video, but you can use one of your choice. I typically like mesquite on my beef or coffee wood. Cherry is also a great one as well.

The Cook
Give steak a coating of oil (use a high temp one because you will sear later)
Give a generous coating of salt/pepper
Follow up with garlic mix
Cook at 300F for 40-60 minutes until you get to the finished temp you would like
Let rest 10-15 minutes (lightly covered)
Crank up grill’s hot side until 500F +
Sear 2 minutes a side
Serve (no need to let rest a second time)
Sit back and marvel at your masterpiece
Enjoy!

Can I do this on a gas or Pellet grill?
This is something that will work on any smoker, or grill. All you need is an indirect side and a hot side for searing.
