Recently I did a 17+ hour no-wrap pork butt. It worked so well that I decided I needed to try a no-wrap brisket. I cooked this brisket for 15+ hours on the Yoder YS640s.

One of the easiest cooks around

The bark on this brisket was amazing! The flat got a little drier than I had hoped, but the flavor was intense. I’ll be trying a couple of things to improve this one.

Part 1

  • Yoder YS640s at 200F running your favorite pellets on the top rack

  • 50% Pepper, 25% Diamond Kosher Salt, 25% Season Salt

  • Trim and season

  • Place of Yoder at 200F Overnight. Let go for 12-13 hours

Part 2

  • Crank it up to 225 when it hits around 190F

  • Cook until you get to 204F

  • Let rest for 60-240 minutes

  • Slice and Enjoy

Results

Intense bark flavor with a slight crunch. It was super enjoyable, but the flat was a tad dry.
