This is my No Work Brisket. You can do this any day of the week and come home from work with a damn fine brisket waiting for you when you get home.

Just plan the morning wrap

The key to this cook is to plan when you will have time to wrap it. It can go 12-14 hours before the wrap, just plan for when you will have 30 minutes to get it wrapped before you head to work.

Part 1

  • Yoder YS640s at 190F running your fav pellets on the top rack

  • 25/25/50 Kosher Salt, Season Salt, and Pepper on Ribs

  • Trim, apply seasoning

  • Place of Yoder at 190F Overnight, let go 12 hours until wrap

Part 2

  • Wrap Brisket in butchers paper before heading to work

  • Program Yoder to run at 250 until Internal temp hits 190F and then go down to 160F on hold

  • When you come home let it rest for 30-60 mins in a towel

  • Slice and serve up

Results

As you can see from the video, you will end up a great brisket that you didn’t have to be home to babysit!
