Smoked pork chops are one of my favorite things.

These are some of the best tasting smoked pork chops you will ever taste. A pellet grill is not known for the most smoke flavor. I fixed that, I cold smoked the pork chops first and then cranked up the pellet grill to give them some great crust on the outside.
Lots of smoke flavor in these
I love pork chops, add in some smoke, and some fried onions, and Iām a happy camper. This process requires an extra step, but well worth it!
The Setup (Part 1)
Salt and Pepper your pork chop
Use A-MAZE-N smoking tube with hickory pellets
Turn on fan in your Yoder to circulate cold smoke
Smoke for 1-2 hours depending on size of pork chop
The Setup (Part 2)
Put pork in fridge (cold meat will sear better and take in more flavor)
Preheat Yoder to 450
Place cold pork chop directly over the firebox for 10-15 mins a side
While pork is cooking, fry up some onions
Cook pork chop to 145F
Let rest for 10-15 minutes and serve with fried onions
Results
This pork chop will have a ton of smoked flavor and some nice crust on the outside after being cooked over the high indirect heat. This is one of my go to meals. I recommend trying the Snake River Farms double chops, well worth the money!
