Twice Baked Potato with a Twist

This is easily one of my favorite sides. It takes a little extra bit of work, but the results are always worth it.

One of the best things about this this side is that, once it is ready, it will sit and stay hot for 20-30 minutes so you can focus on the main course.

Tip

Bake the potatoes in advance and then prep them 30 minutes before you need them.

Ingredients

  • 1 tablespoon of olive oil

  • 1-2 Large baking potatoes

  • Kosher salt

  • 1 sweet or yellow onion

  • 1/2 up fresh grated cheddar cheese

  • 2-3 slices of bacon

  • Chives/green onions

  • 1/2 tablespoon of minced garlic

  • 2 tablespoons of sour cream

  • Butter

  • Sprinkle of crushed rosemary

  • Sprinkle of smoked paprika

  • Salt/Pepper to taste

Directions

  • Use fork or knife and put 2-3 holes in potatoes

  • Lightly coat potato in oil

  • Use kosher or Merlot salt on outside of potato

  • Wrap in foil

  • Cook on grill at 350-400 for an hour or so until fully tender

  • Smoke onion using method in video or just place on top rack to cook until soft

  • Cook bacon

  • Let potato cool for 20 minutes

  • Slice top of potato off to expose the inside

  • Scoop out potato into bowl (keep skin in tact)

  • Mix potato, bacon, diced cooked onion, cheese, butter, salt, pepper, rosemary, sour cream, and green onions. Use mixer for best results

  • Salt/Pepper to taste

  • Pack mix back into potatoes

  • Sprinkle paprika on top

  • Cook for another 20 minutes until top of potato is crunchy

This one is simple, but the results are always a crowd pleaser. Highly recommended next time you have someone over for dinner who you want to impress.
