SO Much Better Than Filet Mignon
Ribeye Filets Cooked Cooked 3 Ways
Many jump to a filet mignon for a tender steak, but they trade tenderness for flavor.
Ribeye Filet Is Flavorful
Pick yourself up a ribeye filet and you will have a tender, flavorful steak that is much better than a filet mignon. In fact, you may never go back to filet mignon again. If you want it even better, make it some Wagyu from Snake River Farms and thank me later!
Cooked 3 Ways
Two of these steaks I salt brined for 20 hours. Simply put a good coating of Kosher salt on all sides and put them in the fridge for 16-48 hours. You will notice they turn a bright red color and they will be full of flavor. The salt gets sucked into the middle of the meat and makes for a more tender, flavorful steak.
1st Steak:
Covered steak in some melted Wagyu Tallow and then applied pepper using my Pepper Cannon (save 10% with code: RUMANDCOOK)
Reverse seared them by cooking indirect until my desired temp of 125F
Rest for 15 minutes on a wire rack. This will carry over to about 134F, which is my preferred finished temp.
One I then pan seared in a cast iron pan with tallow, butter, 2 cloves of garlic, and some thyme.
Use a spoon to keep coating the steak in that deliciousness.
2nd Steak:
Covered steak in some melted Wagyu Tallow and then applied pepper using my Pepper Cannon (save 10% with code: RUMANDCOOK)
Reverse seared them by cooking indirect until my desired temp of 125F
Rest for 15 minutes on a wire rack. This will carry over to about 134F, which is my preferred finished temp.
High heat direct sear 2 minutes per side.
3rd Steak:
I placed a salt block over the lump to allow it to slowly get up to temp.
The final temp goal is 500F
I cooked and seared the steak directly on the salt block (do not salt the steak)
Rotate on all sides until your steak hits the desired resting temp, for me it was 125F.
Rest for 15 minutes on a wire rack. This will carry over to about 134F, which is my preferred finished temp.
