I have not wrapped my ribs lately and I decided I should revisit it to see which way I preferred.

In this video I cooked ribs 4 different ways:
Unwrapped
Foil Boat
Wrapped Last Part of Cook
Wrapped For Rest Only
I used 2 racks of D’Artgnan Foods Berkshire Pork baby back ribs and cut them in half. I removed the membrane and seasoned them with my go to rub from Grill Mates. I then let them rest in the fridge for about 30-45 mins.
Low and Slow
After letting the seasoning soak in, I fired up my Yoder YS640s and put the ribs on right away as the pit got up to 200F. Starting at 200F allows for extra smoke to get into your meat. It takes a bit longer to cook, but really helps to get more smoke flavor.
Once your bark sets, you can spray with water or 50/50 water/apple cider vinager to help keep them moist. I sprayed about every 45mins to an hour. As the meat temperature got up to about 170F I wrapped the one set and foil boated the other set. The other two I cooked until tender, which was around 200F. I wrapped one set to wrap and left the other alone.
After resting all for 15-20 minutes, I put them back on and coated them in my favorite BBQ sauce, Diana’s Gourmet.
For me the unwrapped ribs won.
