Beef ribs done correctly are amazing! Make sure you splurge and pick up a set of dino ribs (3 bone) as they are the best ones to get. If you want to take it a steak further, pick up some Wagyu beef ribs from Snake River Farms.

Trim The Silver Skin

The first thing you need to do is to trim the to layer of fat. Under that fat is some thick silver skin that will not render and will ruin the final product.

Fat Render Is Key

The key to an amazing final product is rendering the fat properly. It’s ok to start low and slow, but bump it to 275 for the last part of the cook to help render out the fat. Cook them until probe tender around 200F-205F. If you decide to wrap, do so around 180F.
