Wood-Fired Crispy Chicken Wings
Wings in a pizza oven?
If you have followed me for any length of time, you know I love me some wings! Growing up two hours from Buffalo, I was spoiled with some great wings. I’m always looking for ways to improve my wing game.
Are They Crispy?
Yes for sure! They are close to the crunch you get from a fried wing. It’s really impressive for a first attempt. I have some ideas to get them even better, but I’ll save that for another video.
One thing you see in this video is that you can use the top of the oven to get some heat without over cooking the top first. You will use this technique for many things as you get used to the oven.
Success Tips
Pre heat it well.
You don’t need 600F. Less heat is better. I’d start around 450F.
Clean your pit before every use.
Use high quality pellets. This will help with temps and reduce ash
Dry brine your wings or dry them with paper towel for extra crispy skin.
Use a warm sauce to coat your wings.
