BBQ Sides

It's a must-have for a complete dinner. There are 8 in the video, but I’ll list my favorites below.

Ingredients

  • Potatoes (preferably russet for twice baked)

  • Olive oil

  • Salt (preferably kosher or flavored)

  • Bacon

  • Cheddar cheese

  • Green onions

  • Onion (red and white)

  • Butter

  • Smoked paprika

  • Freshly ground pepper

  • Aged balsamic vinegar

  • Rosemary (fresh or crushed)

  • Corn on the cob

  • Bell peppers (various colors)

  • Zucchini

  • Squash

  • Asparagus

Instructions

Bacon Bit Hack:

  1. Cut frozen bacon into small slices across the width of a package. Use a bread knife to make it easier.

  2. Simmer until they break apart and become crispy (about 5 minutes).

Twice Baked Potatoes:

  1. Preheat the grill to around 400°F (205°C).

  2. Soak the potatoes in salted water to create a salty skin flavor.

  3. Prick the potatoes with a fork and let them soak for a few minutes.

  4. Rub olive oil on the potatoes and sprinkle with salt.

  5. Grill the potatoes until the skin is crispy and the inside is soft (about 1 hour and 15 minutes).

  6. Cut off the potatoes' top and scoop the insides into a bowl.

  7. Mix in butter, cheddar cheese, green onions, bacon bits, sautéed onions, salt, and pepper.

  8. Scoop the mixture back into the potato skins and sprinkle with smoked paprika.

  9. Grill for an additional 15-20 minutes until the top is golden.

Grilled Vegetables:

  1. Clean and cut various bell peppers, zucchini, and squash.

  2. Skewer the vegetables onto bamboo skewers or use a grilling basket.

  3. Season with olive oil, salt, pepper, and crushed Rosemary.

  4. Grill over medium heat for about 10 minutes, turning occasionally until they are charred and tender.

Grilled Corn on the Cob:

  1. Remove the husks and silk from the corn.

  2. Cut off any straggling parts.

  3. Grill the corn on medium heat for 5-10 minutes, turning occasionally.

Grilled Asparagus:

  1. Trim the woody ends of the asparagus.

  2. Season with olive oil, salt, pepper, and Rosemary.

  3. Grill for 3-4 minutes until tender but still crisp.

Grilled Onion:

  1. Cut onions into wedges.

  2. Season with olive oil, salt, and fresh cracked pepper.

  3. Grill over medium-low heat until caramelized (8-10 minutes).

Serving

  • Serve the grilled vegetables, corn, asparagus, onion, and twice-baked potatoes together for a delicious and colorful BBQ feast.
