Smoked Potatoes with Cheese Sauce Recipe

Introduction

In this video, we're taking a classic dish and putting a twist on it. We'll smoke potatoes on the Yoder and assemble them with a delicious cheese sauce. Stay tuned as I guide you through the process.

Smoking the Potatoes:

  1. Prep the Potatoes: Peel and slice the golden potatoes about a quarter-inch thick using a mandolin.

  2. Smoking Setup: Place the potato slices on racks, ensuring they are packed tight. Using hickory wood pellets, smoke them on the Yoder at 180°F for approximately 40 minutes.

Cheese Sauce:

  1. Prepare Ingredients: In a pot, combine 2 cups of milk, 3 oz of butter, minced garlic, salt, pepper, and 4 tbsp of cornstarch.

  2. Heat Gradually: Warm the mixture slowly to avoid boiling the milk. Stir continuously until the butter is melted and the mixture thickens.

  3. Add Cheese: Gradually add fresh grated white cheddar cheese to create a thick and creamy cheese sauce.

Mixing and Baking:

  1. Mix Potatoes and Cheese Sauce: Place the smoked potatoes in a bowl and pour the cheese sauce over them. Mix well to ensure the potatoes are coated.

  2. Prepare Baking Dish: Grease a baking dish and transfer the potato mixture. Optionally, layer with sliced onions.

  3. Final Smoking: Smoke the assembled dish on the Yoder at 285°F for 1 to 1.5 hours. Cover for the first hour, then uncover to allow a crust to form on top.

Final Touch:

  1. Add Green Onions: In the last 15 minutes of smoking, add chopped green onions on top for color and flavor.

  2. Check for Doneness: Ensure the potatoes are cooked through and the top has a desirable crunch.

  3. Serve: Let it cool for 10-15 minutes, then serve these delicious smoked potatoes with a unique twist!
