Smoked Back Back Ribs
These picture perfect ribs were hickory smoked on my 32" Komodo Kamado.
One of my favorite things to smoke is baby back ribs. This was the first time I didn't use a rub and took it back to basics. This method can be used on any type of smoker whether it be a pellet grill, charcoal/lump smoker, or a good old stick burner.
In this video I used plain old salt and pepper with my favorite BBQ sauce out of Canada (link in video description). I was able to find it on Amazon now and shared in link in the video description.
Basics
This is a simple recipe to follow; Smoke ribs for 3 hours at 275F, wrap in foil for 30 minutes unwrap and put back on the grill, throw some sauce on, wait 5 minutes a side to tack up, and enjoy!
Don't forget to give a spray every 30 minutes to keep them moist.
The "Spray"
1 part apple juice
1 part apple cider vinegar
1 shot of Appleton Jamaican Rum
The Smoke
I used hickory in this smoke, but you can use your personal favorite. I'd consider using any of the following: cherry, apple wood, elder, or Jack Daniels chunks, if you can find them.
Can I do this on a gas grill?
Sure! The key is indirect heat. Just keep one or two burners on low (depending on size of grill) and make sure it stays below 300. You won't want any heat under the ribs, and use the top rack so heat get surround them.
If it gets to the point where you can lift in the middle 2-3" and the ends are still touching the rack, pull em and wrap em.
