Beer Can Chicken, is something I haven’t done in quite some time. No particular reason really, it comes out great, and is easy to do. For this one I decided to add a little bit of a Spanish twist.
All you need is a whole chicken holder.
In this video I use the Yoder YS640s, but you can do these on any grill or smoker pretty easily. Just follow the steps below.
Prep
1 whole chicken
1 can of beer of your choice
Cattleman’s Grill Ranchero Seasoning
Mojo Criollo
KIller Hogs BBQ Sauce
The Smoke
I used hickory in this video, but you can use your personal favorite. Lighter smoking woods like Hickory are very common on chicken, but apple, pecan, and oak would be nice as well.
The Roaster
Use about 8 oz of the beer of your choice
1/4 cup of Mojo Criollo
Preheat for 5-10 minutes in roaster
The Cook
Use hands to release skin from chicken
Spray binder of your choice on skin
Season well (inside, under skin, and on top of skin) with Cattleman’s Grill Ranchero Seasoning
Place chicken on top of preheated roaster
Cook at 350F until temp reaches 165F in breasts (legs will be higher, that’s ok)
Mix 1/8 cup of Mojo Criollo and 1 bottle of BBQ Sauce, give good stir
Coat Chicken and let tack up for 5 minutes
Pull and let cool for 15 minutes
Enjoy!
Can I do this on a gas or Kamado grill?
Sure! Just keep the temps around 350 and pull when done. You can go hotter if you want it more crispy as well.
