You will find many pictures and videos out there of Lollipop Chicken Legs. They look great, but they require some extra work. I wanted to show you how you can have great looking legs, without the extra work.

All you need is a chicken leg holder and cooker of your choice

In this video I use the Yoder YS640s, but you can do these on any grill or smoker pretty easily. Just follow the steps below.

Prep

  • 1 package or 2 of chicken legs

  • Trim any excess fat or hanging skin

  • Seasoning - Red by Hard Core Carnivore, even coating all side

    • Let seasoning sit for 15 minutes on chicken

The Smoke
I used mesquite in this smoke, but you can use your personal favorite. Lighter smoking woods like Hickory are very common on chicken, but I like to add a little extra from time to time. They are going to be cooked hot and fast so they can take it.

The Cook
Grab your hanging rack, spray with a cooking spray to help clean up later one.
Hang chicken legs on rack
Cook at 350F
20 minutes in, poor Killer Hogs BBQ sauce into a heat safe container. This will allow it to pick up some smoke and warm up the sauce
Cook legs until 175F
Dip legs in sauce and let tack up for 5 minutes
Dip legs again and let tack up for 2-3 minutes
Pull and let cool
Enjoy!

Can I do this on a gas grill?
Sure! The key is indirect heat. Just keep one or two burners on low (depending on size of grill) and make sure it stays around 350.
