Smoked Chicken Stuffed Pasta Shells
My Signature Dish
Stuffed smoked chicken shells are my signature dish; it has been a hit with anyone who has tried it. It will take a few hours due to the number of steps, but you can make a large batch and several meals.
Smoked The Chicken
Get yourself some boneless, skinless chicken breasts and smoke them until they are 160F. You can season with anything you like. I generally keep it simple because the sauce will have a ton of flavor.
Shells
I use jumbo pasta shells and boil them for about 10 minutes so they are pliable, and you can stuff them.
Prep
Make your favorite pasta sauce or use one from a jar and season it up. I like to add a fair amount of red wine. Always use a red wine that you would drink.
Make a cheese blend. I use mozzarella, 4% cottage cheese, and parmesan cheese. You can also use some ricotta if you like it.
After the chicken has cooled, dice it and get ready to assemble:
Put a layer of sauce on the bottom of your cooking dish
Stuff the shells with a couple of pieces of chicken and some cheese.
Place shells in the dish
Cover with remaining sauce
Top with some added parmesan cheese
Bake at 325F for 30-45 minutes
